I love making muffins, so read on to see what happened. I always need simple and I’ve made muffins before from regular pancake mix, but would it work with a gluten free mix? I always stock Clabber Girl Baking Powder (and was excited to see that it’s gluten free), as well as Spice Islands Cinnamon, so I knew I could add them to my muffins. I planned to make pancakes and waffles, but as the pandemic stretched on and I started trying to cook and bake more, I decided that I would try to make gluten free muffins using Maple Grove Farms Gluten Free Pancake and Waffle Mix. While everyone was getting ready for lockdown, I had stocked my pantry with two important items – Maple Grove Farms Gluten Free Pancake and Waffle Mix, as well as Maple Grove Farms 100% Pure Maple Syrup.
